Poached Pears with Elderberry Echinacea Cordial
Ingredients:
Peach Kernel - xing ren, Walnut - hu tao ren, Sichuan Fritillary Bulb - chuan bei mu, Honey, Pears- halved and cored - I prefer them tart and hard so they don't get too mushy when cooked.
Heat an oven to 350 degrees. Grind to powder and simmer the Peach, Walnut, and Frittilary in the honey with a little water for 10 minutes. Be careful not to burn the honey. Put a healthy dollop of the herb/honey mixture in the pit of the pear. Set the pears face up in a baking pan with a little water in the bottom. Bake in the oven until the pears soften, about 30 minutes. Serve hot, drizzled with a liberal amount of Elderberry Echinacea Cordial.
The traditional Chinese use for this formula is to supplement Lung yin and qi, to clear phlegm, and to alleviate cough.
